No-Bake Raspberry Quinoa Breakfast Bars

Description

A simple no-bake breakfast bar that’s loaded with fibre, antioxidants, and healthy fats to keep you full, satisfied, and regular.

Ingredients

Scale
To make the bars:
  • 6 pitted dates
  • 1/4 cup almond butter, or other nut butter or alternative
  • 1/4 cup coconut flour
  • 1/4 cup chia seeds
  • 1 cup cooked quinoa
  • 1 cup raspberries, fresh or frozen
To make the frosting (optional):
  • 1/2 cup coconut butter
  • 2 Tbsp coconut oil
  • 1 Tbsp raw honey

Instructions

  1. Place all of the ingredients for the breakfast bar into your food processor until it forms a dough like ball.
  2. Spray an 8×8 dish with coconut oil and press the bar into the dish. Refrigerate for 30 minutes.
  3. Meanwhile, heat the ingredients for the frosting in a small pan until melted. Spread evenly over bar and place back in fridge until firm.

Notes

Make it Vegan

Swap the honey for pure maple syrup.
