Description

A simple and versatile DIY meal the whole family will love.

Ingredients

Scale
Salad
  • 4 eggs, hard or soft boiled
  • 1 cup chickpeas, drained and rinsed
  • 4 Tbsp fresh herbs, diced
  • 8 cups veggies, chopped (carrots, purple cabbage, mushrooms, avocado, peppers, cucumbers)
  • 48 cups spinach, kale or other leafy greens
Hummus Dressing
  • 1/4 cup hummus
  • 2 Tbsp extra virgin olive oil
  • juice from 1/2 lemon

Instructions

  1. Place all veggies and proteins on the table in separate bowls.
  2. Combine the dressing and place on the table.
  3. Use the spinach as a base and top with whatever veggies and protein you want. Drizzle with some hummus dressing.

Notes

Make it Vegan

Omit the eggs or replace them with black beans.
