An easy lunch that packs a lot of healthy fats and delicious flavour!
Ingredients
Scale
- 2 4oz salmon fillets
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup raw honey
- Juice from 1/2 lemon
- Pinch of sea salt
- 4 Tbsp chopped green onion
- 2 cups spiralized purple cabbage
- 4 sprouted whole grain buns
Instructions
- Line your slow-cooker with a reusable cookie sheet or parchment paper. Place salmon on top.
- Combine oil, vinegar, honey, lemon, and salt and pour over salmon.
- Cook on high for 1 1/2 hours or until salmon is flaky. Pull apart with a fork.
- Divide salmon, onion, and cabbage between the buns.
- Serve warm or cold!

- Swap out the bun for brown rice or lettuce!
