Description

An easy lunch that packs a lot of healthy fats and delicious flavour!


Ingredients

Scale
  • 2 4oz salmon fillets
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup raw honey
  • Juice from 1/2 lemon
  • Pinch of sea salt
  • 4 Tbsp chopped green onion
  • 2 cups spiralized purple cabbage
  • 4 sprouted whole grain buns

Instructions

  1. Line your slow-cooker with a reusable cookie sheet or parchment paper. Place salmon on top.
  2. Combine oil, vinegar, honey, lemon, and salt and pour over salmon.
  3. Cook on high for 1 1/2 hours or until salmon is flaky. Pull apart with a fork.
  4. Divide salmon, onion, and cabbage between the buns.
  5. Serve warm or cold!

Notes

Gluten-Free Option

  • Swap out the bun for brown rice or lettuce!
