No-Bake Shortbread Bites

Description

Enjoy a healthy shortbread in less than 10 minutes!


Ingredients

Scale
  • 1 cup coconut flour (or spelt, whole grain, etc)
  • 1/2 cup coconut butter
  • 1/4 cup pure maple syrup
  • Pinch of sea salt
  • 1/2 Camino organic extra dark chocolate bar (80% cacao)

Instructions

  1. In a small double broiler on low heat, melt the chocolate.
  2. Meanwhile, use your hands to combine the rest of the ingredients in a small bowl.
  3. Roll into 12 balls and place on a cookie sheet covered with a reusable cookie sheet or wax paper.
  4. Dip half of each ball into chocolate and set on wax paper.
  5. Place in the freezer for 5 minutes, or until chocolate is hardened.
  6. Store in the fridge in an airtight container.

Notes

Time-Saving Tip

  • Mix some dark chocolate chunks into the batter instead of dipping in chocolate to make it in half the time! (Yes, I’m talking 5 minutes instead of 10 minutes …)
