Slow-Cooker Sloppy Joes

Description

Enjoy the flavours of this classic dish with a healthy twist!


Ingredients

Scale
  • 1/2 white onion
  • 1 jalapeño pepper
  • 2–3 garlic cloves
  • 1 green pepper
  • 1lb extra lean ground turkey breast
  • 1 28oz can low-sodium diced tomatoes
  • 1 156ml can low-sodium tomato paste
  • 1 Tbsp mustard
  • 1/2–1 Tbsp chilli powder
  • 1–2 cups spinach

Instructions

  1. Dice the onion, jalapeno peppers (seeds removed to reduce spice), garlic, and green pepper.
  2. Spray your slow-cooker with cold-pressed, extra virgin olive oil.
  3. Add all ingredients to the slow-cooker, mix together.
  4. Cook on low for 8 hours. Top spinach with sloppy joe mixture.

Notes

Make it Vegetarian

  • Swap the turkey for your favourite beans, lentils, or quinoa for an easy vegetarian meal.

Give me Carbohydrates!

  • If you prefer carbohydrates with your dinner – try placing your sloppy joe mixture on top of brown rice, quinoa, ezekial bread, or a whole-grain bun.

Say Cheese

  • If you can’t handle your sloppy joes without the gooey cheese, feel free to top it with a sprinkle of shredded cheese.
