Ingredients
Scale
- 1/2 white onion
- 1 jalapeño pepper
- 2–3 garlic cloves
- 1 green pepper
- 1lb extra lean ground turkey breast
- 1 28oz can low-sodium diced tomatoes
- 1 156ml can low-sodium tomato paste
- 1 Tbsp mustard
- 1/2–1 Tbsp chilli powder
- 1–2 cups spinach
Instructions
- Dice the onion, jalapeno peppers (seeds removed to reduce spice), garlic, and green pepper.
- Spray your slow-cooker with cold-pressed, extra virgin olive oil.
- Add all ingredients to the slow-cooker, mix together.
- Cook on low for 8 hours. Top spinach with sloppy joe mixture.
Notes
Make it Vegetarian
- Swap the turkey for your favourite beans, lentils, or quinoa for an easy vegetarian meal.
Give me Carbohydrates!
- If you prefer carbohydrates with your dinner – try placing your sloppy joe mixture on top of brown rice, quinoa, ezekial bread, or a whole-grain bun.
Say Cheese
- If you can’t handle your sloppy joes without the gooey cheese, feel free to top it with a sprinkle of shredded cheese.
