Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 small onion
  • 4 celery stalks
  • 4 carrots
  • 2 cups frozen peas
  • 2 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk
  • 1 Tbsp chia seeds
  • 1 Tbsp thyme
  • 1 tsp garlic powder
  • salt and pepper, to taste

Instructions

  1. Chop your onion, celery and carrots into small pieces.
  2. Place all of your ingredients in the slow-cooker and cook on low for 8 hours.
  3. Before serving, use two forks to shred the chicken. Serve on top of whole grain biscuits.
