Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 small onion
- 4 celery stalks
- 4 carrots
- 2 cups frozen peas
- 2 cups low-sodium chicken broth
- 1 cup unsweetened almond milk
- 1 Tbsp chia seeds
- 1 Tbsp thyme
- 1 tsp garlic powder
- salt and pepper, to taste
Instructions
- Chop your onion, celery and carrots into small pieces.
- Place all of your ingredients in the slow-cooker and cook on low for 8 hours.
- Before serving, use two forks to shred the chicken. Serve on top of whole grain biscuits.
