Ingredients

Blackened Chicken
- 4 boneless, skinless chicken breasts
- 1 tsp paprika
- 1/2 tsp cayenne
- 1/2 tsp cumin
- 1/2 tsp onion powder
- pepper, to taste
Salad
- 8 cups of mixed lettuce
- 2 orange peppers
- 2 cups cherry tomatoes
- 2 cups of corn
- 1 can low-sodium black beans, drained and rinsed
Yogurt Dressing
- 1/2 cup plain, non-fat yogurt
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp dill
- 1/4 tsp parsley
- juice from one lime
Instructions
- Preheat your BBQ to 400F.
- In a small bowl, combine the seasonings for the blackened chicken. Coat the chicken breasts with the seasoning and cook on the BBQ for 15 minutes, or until cooked through.
- Meanwhile, wash and dry your lettuce, chop your peppers into bit size pieces, halve your tomatoes and combine your salad ingredients into a large bowl.
- In a small container, whisk together the yogurt dressing ingredients.
- Once chicken is cooked through, cut into bite-sized pieces and add to salad. Top with dressing.
- Enjoy warm or cold!
