Southwestern Chopped Salad with Yogurt Dressing

Description

Say buh-bye to boring salads – because this dish is loaded with amazing flavours.


Ingredients

Scale

Blackened Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • pepper, to taste

Salad

  • 8 cups of mixed lettuce
  • 2 orange peppers
  • 2 cups cherry tomatoes
  • 2 cups of corn
  • 1 can low-sodium black beans, drained and rinsed

Yogurt Dressing

  • 1/2 cup plain, non-fat yogurt
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp dill
  • 1/4 tsp parsley
  • juice from one lime

Instructions

  1. Preheat your BBQ to 400F.
  2. In a small bowl, combine the seasonings for the blackened chicken. Coat the chicken breasts with the seasoning and cook on the BBQ for 15 minutes, or until cooked through.
  3. Meanwhile, wash and dry your lettuce, chop your peppers into bit size pieces, halve your tomatoes and combine your salad ingredients into a large bowl.
  4. In a small container, whisk together the yogurt dressing ingredients.
  5. Once chicken is cooked through, cut into bite-sized pieces and add to salad. Top with dressing.
  6. Enjoy warm or cold!
