Description

A light and refreshing summer salad – perfect for lunch, dinner, or a side dish!

Ingredients

Scale
For the salad:
  • 4 cups mixed lettuce
  • 2 cups strawberries, thinly sliced
  • 1 cup celery, diced
  • 1/4 cup sunflower seeds
For the dressing:
  • 1/2 cup strawberries
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp pure maple syrup

Instructions

  1. Combine all salad ingredients together
  2. In a blender, blend all of the dressing ingredients until smooth.
  3. Drizzle salad dressing over salad and enjoy.

Notes

Add protein

Add roasted chickpeas or grilled chicken to your salad.
