A light and refreshing summer salad – perfect for lunch, dinner, or a side dish!
Ingredients
Scale
For the salad:
- 4 cups mixed lettuce
- 2 cups strawberries, thinly sliced
- 1 cup celery, diced
- 1/4 cup sunflower seeds
For the dressing:
- 1/2 cup strawberries
- 2 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp pure maple syrup
Instructions
- Combine all salad ingredients together
- In a blender, blend all of the dressing ingredients until smooth.
- Drizzle salad dressing over salad and enjoy.

Add roasted chickpeas or grilled chicken to your salad.
