A quick weeknight dinner for the whole family!

- 4 boneless, skinless chicken breasts
- 2 cups of salsa
- 2 cups spinach, chopped
- 1 cup frozen corn
- 4 peppers
- 1/2 cup shredded cheese
- 1/2 cup cilantro, chopped
Instructions
- Place your chicken, salsa, spinach, and corn in your slow-cooker and cook on low for 8 hours.
- When chicken is ready, shred with two forks.
- Preheat your oven to 425F. Cut the top off each pepper and remove the seeds.
- Stuff with chicken and top with some shredded cheese. Place in the oven and bake for 10 minutes. Top with cilantro.
