A quick weeknight dinner for the whole family!


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups of salsa
  • 2 cups spinach, chopped
  • 1 cup frozen corn
  • 4 peppers
  • 1/2 cup shredded cheese
  • 1/2 cup cilantro, chopped

Instructions

  1. Place your chicken, salsa, spinach, and corn in your slow-cooker and cook on low for 8 hours.
  2. When chicken is ready, shred with two forks.
  3. Preheat your oven to 425F. Cut the top off each pepper and remove the seeds.
  4. Stuff with chicken and top with some shredded cheese. Place in the oven and bake for 10 minutes. Top with cilantro.
