The perfect side dish to your Valentine’s Day dinner!


Ingredients

Scale
  • 3 large beets
  • 1/3 cup plain, non-fat Greek yogurt
  • 1 Tbsp cold-pressed extra virgin olive oil
  • 1 1/2 tsp red wine vinegar
  • 1/2 tsp dijon mustard
  • pepper, to taste

Instructions

  1. Peel, rinse and grate beets into a large bowl.
  2. In a small bowl, combine yogurt, oil, vinegar, mustard and pepper.
  3. Pour over beets and mix well.

Notes

Make it a Meal

  • Add 1 cup of cooked quinoa to make it a delicious lunch!
