Ingredients

For the tacos:
- 4 yams
- 1 lb ground turkey
- 1 cucumber
- 2 roma tomatoes
- 1 avocado
- 1 can organic black beans
- Cilantro, optional
- Salsa, optional
For the taco seasoning:
- 1 1/2 tsp ground cumin
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp dried oregano
- 1/2 Tbsp chilli powder
- sea salt & pepper, to taste
Instructions
- Preheat your oven to 475F.
- Use a fork to poke shallow holes around each yam. Place on a baking sheet and cook for 1 hour.
- Mix together your taco seasoning in a small dish.
- Rinse your black beans and dice your cucumbers, tomatoes, and avocado. Set aside.
- Place your turkey in a pan and cook on medium heat, breaking apart with a spoon. Add the taco seasoning and continue to stir, about 10 minutes.
- Meanwhile, chop the cilantro and prepare your salsa.
- When the yams are ready, slice in half lengthwise.
- Stuff the yams with the meat, beans, and toppings.
- Top with cilantro and salsa to serve.
