Taco Stuffed Yam

A simple lunch or dinner that will blow your taste buds away!

Ingredients

Scale
For the tacos:
  • 4 yams
  • 1 lb ground turkey
  • 1 cucumber
  • 2 roma tomatoes
  • 1 avocado
  • 1 can organic black beans
  • Cilantro, optional
  • Salsa, optional
For the taco seasoning:
  • 1 1/2 tsp ground cumin
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp dried oregano
  • 1/2 Tbsp chilli powder
  • sea salt & pepper, to taste

Instructions

  1. Preheat your oven to 475F.
  2. Use a fork to poke shallow holes around each yam. Place on a baking sheet and cook for 1 hour.
  3. Mix together your taco seasoning in a small dish.
  4. Rinse your black beans and dice your cucumbers, tomatoes, and avocado. Set aside.
  5. Place your turkey in a pan and cook on medium heat, breaking apart with a spoon. Add the taco seasoning and continue to stir, about 10 minutes.
  6. Meanwhile, chop the cilantro and prepare your salsa.
  7. When the yams are ready, slice in half lengthwise.
  8. Stuff the yams with the meat, beans, and toppings.
  9. Top with cilantro and salsa to serve.
