Tarragon Chicken Salad

Description

A tangy and creamy chicken salad with the perfect pop of sweetness.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup green grapes, halved
  • 1/3 cup plain, non-fat Greek yogurt
  • 3 Tbsp dijon mustard
  • 1 Tbsp dried tarragon
  • 4 cups spinach

Instructions

  1. Grill, bake or poach the chicken breasts and chill.
  2. Meanwhile, combine the yogurt, mustard and tarragon leaves.
  3. Cut the chicken into bite-size pieces and mix with the sauce. Gently fold in grapes.
  4. Top spinach with chicken salad.
