Teriyaki Chicken Kabobs

Description

A simple and sweet recipe that’s perfect for a casual family dinner or backyard BBQ.

Ingredients

Kabobs
  • 2 boneless, skinless chicken breasts
  • 2 apricots, halved and pit removed
  • 1 slice of pineapple, cut into large pieces
  • 4 skewers
Teriyaki Sauce
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp raw honey
  • 1 clove garlic, pressed
  • 1/4 tsp ground ginger

Instructions

  1. Combine the ingredients for the teriyaki sauce in a small pot. Bring to a boil and then reduce to a simmer for 5 minutes. Remove from heat.
  2. Meanwhile, cut chicken into large pieces.
  3. Place chicken in a ziplock bag and pour sauce over top. Let marinade a minimum of 15 min, or overnight.
  4. On the skewers, alternate chicken and pineapple or chicken and
  5. apricots.
  6. Heat BBQ to 450F and place skewers on BBQ. Cook for 10-12 minutes, or until chicken is cooked through.
