Tex Mex Salad with Cilantro Lime Dressing

Description

The best salad on a hot Summer day! It’s light, yet bursting with delicious flavours and a creamy cilantro dressing. It comes together in just 10 minutes – no baking required.


Ingredients

Scale

For the Salad

  • 1 head romaine lettuce, washed and torn into bite-size pieces
  • 1 tomato, halved and thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/2 avocado, thinly sliced
  • 1 can black beans, drained and rinsed
  • Taco seasoning
  • Optional: jalapeno, radish, cabbage, grilled corn

For the Dressing

  • 1/2 avocado
  • 2 tablespoons extra-virgin olive oil
  • Juice from 2 limes
  • 1/2 cup fresh cilantro
  • 1/2 jalapeno (optional: seeded)
  • Pinch sea salt

Instructions

To make the Salad

  1. Divide the lettuce among four bowls.
  2. In a small bowl, mix the beans together with the taco seasoning.
  3. Top the lettuce with sliced tomato, cucumber, avocado, black beans, and any other toppings you love.

To make the Dressing

  1. In a small food processor, combine the avocado, oil, lime juice, cilantro, jalapeno, and sea salt. Mix until smooth and creamy.
  2. Divide among four bowls.
  3. Serve immediately.

Notes

Prep Tip:

Prep the salad ingredients ahead, keeping the lettuce separate. Make the dressing immediately before serving.

Variation Tip

Chickpeas or organic, grass-fed ground beef works well also.

Serving Tip:

Serve with organic corn chips and homemade salsa.
