Southwestern Turkey Cups

Description

The perfect recipe to batch cook and freeze to use throughout the week or month.

Ingredients

Scale
  • 2lbs extra lean ground turkey, organic and grassfed
  • 1/2 cup egg whites
  • 1 1/2 cups fresh salsa
  • 1 Tbsp cumin
  • 1/2 tsp chilli powder
  • 2 Tbsp ground flaxseed
  • Pepper, to taste
  • 1 avocado, thinly sliced

Instructions

  1. Preheat your oven to 400F.
  2. In a medium bowl mix turkey, egg whites, 1 cup of salsa, and seasonings together.
  3. Divide among 12 muffin tins, and using the remaining 1/2 cup of salsa, place a dollop of salsa on top of each turkey cup and bake for 25 minutes.
  4. Top with a thin slice of avocado or extra salsa.
