A delicious twice baked yam complimented with parmesan cheese and chives. The healthiest way to beat any craving.
Ingredients

- 4 yams
- 1/2 cup non-fat, plain Greek yogurt
- 1/2 cup fresh chives, diced
- 1/2 cup Parmesan cheese
Instructions
- Preheat your oven to 425F.
- Slice your yams in half, lengthwise.
- Spray a baking pan with extra virgin olive oil and place the yams face down. Bake for 1 hour.
- Once slightly cooled, gently remove yam from skin, leaving approximately 1/2 inch on the bottom.
- Mix the yam, yogurt, chives and parmesan cheese. Divide back into the yam skins.
- Place bake in the oven and bake for another 5-10 minutes.
- Top with a little extra yogurt and chives.

You can prepare this recipe ahead and re-heat before serving.
