- 4 rice wraps
- 1/2 cup thinly sliced carrots
- 1/2 cup thinly sliced cucumber
- 1/4 cup spinach
- 1 thinly sliced avocado
Instructions
- Fill a shallow dish with 1” warm water and place a double layer of paper towel beside it.
- Soak each rice wrap in warm water for 5 seconds. Place on the paper towel and dab both sides.
- Transfer to a plate and fill quickly with vegetables (it continues to soften and will get quite sticky!). Fold short ends over and roll tightly.
- Slice into sushi rolls, if desired.
