- 1 yam, peeled & cut into small pieces
- 2 cups spinach, cut into small pieces
- 12 eggs
- 1 cup egg whites (optional)
Instructions
- Preheat your oven to 400F and spray a muffin tin with oil.
- Beat the eggs & egg whites together.
- Mix in yam & spinach and divide into 12 muffin tins and bake for 20 minutes.
