A quick and easy breakfast that comes together in minutes and fills you up.

Ingredients

Scale
  • 1 yam, peeled & cut into small pieces
  • 2 cups spinach, cut into small pieces
  • 12 eggs
  • 1 cup egg whites (optional)

Instructions

  1. Preheat your oven to 400F and spray a muffin tin with oil.
  2. Beat the eggs & egg whites together.
  3. Mix in yam & spinach and divide into 12 muffin tins and bake for 20 minutes.
